090. Chicken with apples and prunes (a recipe from Veronika Lysakova)

Not long ago I invited the blog's readers to share their recipes with everyone as a "guest post". Today I present a recipe by Veronika Lysakova: chicken stuffed with apples and prunes, with a side of baked potatoes. For some reason I associate this dish with Christmas, but I don't think it's unsuitable at other times of year ;).

Cooking time ≈ 1.5 hours.

Ingredients:

  • a chicken
  • 2 small apples
  • 200 g prunes
  • garlic sauce (Calvé, for example)
  • 1 sweet pepper
  • 2 tomatoes
  • 250 g cheese
  • ≈ 5 cloves of garlic
  • potatoes for the side
  • salt and pepper to taste

Cut the apples into small pieces.

Wash the chicken and stuff it with the apples and prunes.

Tie it up with string so the apples don't fall out.

Coat the chicken with the sauce of your choice (you can add a little salt and pepper to it).

Wash the potatoes and wrap them in pieces of foil.

Put the chicken into a roasting bag.

Place in an oven heated to 230°C for 40 minutes.

Mix the chopped tomatoes with the sweet pepper cut into rings. Pepper, salt, add the grated cheese and the garlic. Take the chicken out of the bag, spread the vegetable mixture over it and put it back in the bag. Bake for another ten minutes.

Put the foil-wrapped potatoes into the oven and bake for 30 minutes, shaking the tray now and then (so the potatoes bake evenly).

Put the chicken on a platter. Serve with the potatoes, sliced.
