093. Home-made oladyi (recipe)
Oladyi are small fried pancakes made from a runny batter of flour and eggs mixed with water or milk. What sets them apart from blini is the soda or yeast in the batter, which makes them fluffier. But there's no need to fuss with yeast — under the cut you'll find a very simple recipe for very tasty oladyi ;).
Cooking time ≈ 20 minutes.
Ingredients:
- 1 egg
- 0.5 l kefir
- 0.5 glass of sugar
- 2 glasses of flour
- 1 tsp baking soda
- 1 tsp vinegar
- salt to taste
Beat the egg well with the sugar. Add the flour and the kefir alternately so there are no lumps: a spoon of flour — beat, a splash of kefir — beat. Keep going until the kefir runs out. Then add baking powder, or soda slaked with vinegar.
Fry the oladyi in plenty of oil, but not deep-fried. Turn them with two forks to brown the other side.
Pile the finished oladyi on a wide dish. Serve with sour cream or honey.
