105. Cream of cheese soup with king prawns and croutons (recipe)
Not long ago I posted a recipe for cream of mushroom soup; this time I want to share a recipe for cheese soup with king prawns, paprika and crunchy croutons. There are lots of cheese soup recipes, but this one is, to my mind, the tastiest and simplest to make.

Cooking time ≈ 30 minutes.
Ingredients:
- 50 g prawns (I used king prawns)
- 200 g Gouda cheese
- 200 ml 10% cream
- 500 ml chicken stock (not from cubes!)
- 100 g flour
- 50 g butter
- 1 tsp paprika
- 1 clove of garlic

Boil the prawns: bring water to the boil, salt it, drop in the frozen prawns, wait for the water to boil again and drain after 10 seconds.
Peel the prawns (remove the head and gently pull off the shell with the legs).
Grate the cheese coarsely.
Melt the butter in a saucepan.
Sweat the flour in the butter (fry until golden).
Add the stock, salt and paprika. Mix thoroughly.
Add the cheese, stirring constantly. Cook over a low heat, still stirring, for five minutes. Add the cream and the finely chopped garlic.
Keep on the heat for another half a minute and ladle into bowls. Add the prawns and croutons. You can garnish with parsley.
