119. Caramel pancakes with apples for Maslenitsa (recipe)

Today is the last Sunday of winter, which means most people in Russia are celebrating Maslenitsa — baking pancakes, asking their loved ones for forgiveness and welcoming spring. I couldn't miss such an occasion, so I'm sharing with you a wonderful recipe for caramel pancakes with apples: they're fairly simple to make, but they will grace any table, not just a Maslenitsa one.
Cooking time ≈ 1.5 hours.

Ingredients:

    For the batter:

  • 120 g flour
  • 250 ml milk
  • 125 ml water
  • 50 g sugar
  • 2 eggs
  • a pinch of salt
  • For the filling:

  • 6 apples
  • 20 ml lemon juice
  • 1 tsp lemon zest
  • ½ tsp cinnamon
  • 2 tbsp butter
  • 70 g sugar
  • 250 ml sour cream
  • 3 tbsp icing sugar

First let's make the pancakes. In a large bowl mix the milk, water, sugar, eggs and salt.

Add the flour and whisk until you have a smooth mass with no lumps.

Heat a frying pan over medium heat. Grease it with vegetable oil. Pour about ¼ of a ladle onto the pan.

Let the batter spread evenly and cover the pan in a thin layer. Put the pan back on the heat and wait until the edges on one side turn golden brown and start to come away from the surface. Flip the pancake over with a spatula and cook this side only until golden. Don't forget to stir the batter each time before you start a new pancake. Put the pancakes on a heatproof plate.

Peel and core the apples. Cut them into small squares. Put the apples in a bowl and add the zest, lemon juice and cinnamon.

Melt the butter in a frying pan over medium heat. Pour in the sugar and cook, stirring from time to time, until the sugar turns amber in colour. If the caramel starts to darken, take it off the heat immediately.

Add the apples and cook, stirring, until they soften and the caramel is absorbed. Take off the heat.

Mix the sour cream with the icing sugar. Stir well.

Divide the apples between the pancakes by eye.

Pour the prepared sour cream over the top.

Roll the pancakes up. Serve hot, with the remaining caramel apples and the sour cream sauce.
