129. Banana muffins with chocolate (American recipe)

Muffins are small sweet cakes. You can serve them with tea or make them for a festive table. If there's no time to fuss with complicated cake recipes ("Three creams" or "Three chocolates", for example), these muffins will come to your rescue. There are two kinds of muffin: English and American. English muffins are made with yeast dough, while American ones have baking powder or bicarbonate of soda in the batter. Under the cut I'll share the American recipe with you.

Cooking time ≈ 40 minutes.

Ingredients (for 10 muffins):

  • 0.5 glass of wheat flour
  • 2 bananas
  • 0.5 glass of cane sugar (ordinary sugar will do, but it isn't as fragrant)
  • 1 egg
  • 50 g butter
  • 1 tsp baking powder
  • 100 g milk chocolate

Soften the butter. Mix it with the cane sugar. Break the egg into the same bowl.

Mix the flour with the baking powder and fold it carefully into the sugar.

Peel the banana and mash it to a purée (with a fork or a blender).

Mix the bananas into the batter. If it comes out runny, you can add more flour. Spoon the batter into the tin.

Bake at 200°C for half an hour.

Chop the chocolate and melt it in a bain-marie. Coat the cakes with the glaze you get.
