080. "Pancho" cake (recipe)
At the weekend we picked cherries. There are lots of them and nowhere to put them — you can't eat a bucket of sour berries with stones, can you? Though I suppose that's a matter of taste.
So, to reduce the pile at least a little, I decided to make a "Pancho" cake. Jumping ahead: I liked it more than the tiramisu recipe or the creamy cheesecake I made last time.

Let me note straight away that the sponge layers for this cake can be baked yourself if you like. But you know how lazy I am, right? ;)
Cooking time ≈ 30 minutes.
Ingredients:
- 2 sponge cake layers (≈ 30 cm across)
- 1 glass of sugar
- 200 g cherries
- 1 glass of nuts (any kind, I used walnuts)
- thick sour cream (as rich as possible — 30% in my case)
- 1 bar of dark chocolate (optional — I did without)
First stone the cherries. It's a tedious, slow job (for me at any rate). I can recommend using a paper clip or a hairpin.
Then grind the nuts in a blender (or just chop them finely).
Whip the sour cream with a mixer for about ten minutes. Add a glass of sugar and whip for another five minutes.
The cream is ready, now the cake itself. Cut a circle out of the first sponge layer to fit the diameter of your dish and spread it with cream.
Sprinkle with about half of the nuts.
Now take the remaining pieces of sponge, break them up and, dipping them in the cream, lay them over the nuts.
Once the first layer is done, take about 2/3 of the cherries (don't forget to drain all the juice off) and spread them evenly.
Over the cherries put another layer of sponge dipped in cream and sprinkle with the rest of the nuts.
Then add one more layer of sponge in cream.
Put the remaining cherries on it. You should have a little sponge left, which we heap on top of the cherries. Pour the remaining cream over it all (there should be plenty left). Put the cake in the fridge for a couple of hours.
If you like, you can now grate or melt the chocolate and sprinkle (or pour) it over the cake. I didn't :).
