140. Frozen yogurt (American "frozen yogurt" recipe)

I'm carrying on the series of summer recipes. Not long ago I posted the recipe for a summer dessert with strawberries and mascarpone, and today I'll share how to make a dish that is very popular outside Russia — frozen yogurt (frozen yogurt, or, as it's also called, Frogurt and FroYo). It's a newcomer to the ice cream market, and what sets it apart is the absence of a long list of chemicals and obscure ingredients. The recipe for the perfect dish for anyone losing weight or simply watching their figure is under the cut.

Cooking time ≈ 10 minutes + 5 hours in the fridge.
Ingredients:

  • 300 g natural yogurt (more on this below)
  • 150 g cane sugar
  • 3 tsp vanilla sugar

First you need to buy the right yogurt. It has no fillers, and the ingredient list is pleasingly short: "pasteurised milk, milk powder, gelatine, starter culture". In the shops I only found these ones (from Valio).

Mix the yogurt with the vanilla sugar.

Add the cane sugar and whisk with a mixer for about five minutes — the sugar should dissolve completely. It's the cane sugar that gives our frozen yogurt its hint of caramel and Irish ale. Bear in mind that after freezing the taste becomes a little blander.

Close the container and leave it in the fridge for an hour. Then whisk it with the mixer again, cover it with a lid and put it in the freezer for 4–5 hours (the mixture should thicken). Spoon the frozen yogurt into bowls, decorate it with fresh fruit and sprinkle it with grated chocolate or biscuits.

This is the recipe for vanilla-caramel frozen yogurt (frozen yogurt vanilla). To make strawberry (frozen yogurt strawberry), for example, add strawberries blitzed in a blender to the mixture, and so on.
