087. Gratin with potatoes and bacon (French recipe)

 

I've already shared the recipe for a Basque-style gratin with eggs — a tasty, healthy vegetable dish under a crisp cheese crust. But what if you want something more filling?

Under the cut you'll find photos and the recipe for a gratin with potatoes and bacon, made in the best tradition of French cooking.

Cooking time ≈ 1 hour.

Ingredients:

  • 9 medium potatoes
  • 3 eggs
  • 150 ml 20% cream
  • 300 g bacon (I used pork loin, but absolutely any meat will do)
  • 700 g cheese
  • 1 head of garlic
  • 60 g butter
  • 400 ml milk
  • salt, pepper
Chop the garlic, slice the potatoes thinly, grate the cheese coarsely. Cut the bacon (loin) into small pieces.



Grease the dish with butter, put in a layer of potatoes, salt and pepper it. Pour the cream over evenly.



On top put a layer of cheese, a layer of potatoes, loin, potatoes, cheese again and so on until the ingredients run out. Don't forget to salt and pepper every potato layer. Before the last layer of loin spread the chopped garlic evenly over the potatoes.



The top layer should be cheese. Put the dish into an oven heated to 200°C for 35 minutes. Take it out, pour over the mixture of milk and eggs, and put back for another ten minutes.
