139. Chicken in sweet and sour sauce (Chinese recipe)

My collection already has a recipe for chicken with mushrooms in cream sauce and a recipe for chicken fillet breaded in breadcrumbs. Both dishes have to be served with rice, but if you'd like to bring some variety to a festive dinner, it's time for a simple and rather unusual Chinese recipe for chicken in sweet and sour sauce. Cooking time ≈ 40 minutes.
Ingredients:
- 900 g chicken fillet
- 2 tbsp olive oil
- 1 clove of garlic
- 1 tsp Tabasco
- 1/4 glass of apple juice
- 1/3 glass of cane sugar
- 2 tbsp tomato sauce
- 1 tbsp cider vinegar
- 1/2 glass of water
- 1/3 glass of soy sauce
Cut the chicken fillet into small pieces.

Fry it in a deep frying pan in olive oil until golden.

Move the fillet to a separate dish. Mix the apple juice with the water, cider vinegar, sugar, soy sauce, ketchup and spices.

Pour the liquid into the pan the chicken was fried in. Stirring until the sugar has completely dissolved, heat the liquid over medium heat without letting it boil. Put the fried pieces of chicken into the pan with the sauce. When the mixture comes to the boil, turn the heat down, cover with a lid and leave for 20 minutes.

Serve with boiled white rice.
