152. Burger with poached eggs (a recipe from Men's Health magazine)

Eggs for breakfast can never bore a healthy person, especially if you cook them in different ways. If you've already mastered the recipe for poached eggs, making this dish won't give you any trouble at all. Under the cut you'll find another recipe for a healthy burger from Men's Health magazine — this time with pesto sauce (if you have any left after the Italian spaghetti with pesto), pepper and bacon.

Cooking time ≈ 30 minutes.
Ingredients (for 4 servings):

  • 8 eggs
  • 2 tbsp pesto sauce
  • 2 tbsp natural yogurt (more about it in the frozen yogurt recipe)
  • 4 wholegrain buns
  • 4–8 slices of dry-cured ham (jamón, for instance) or bacon
  • 2 red peppers
  • salt and pepper to taste

First let's make the eggs. How to make poached eggs can be found in this recipe: Poached eggs (French recipe).

You can also make poached scrambled eggs out of half the eggs, but that's a matter of taste.

Now let's make the sauce — mix the pesto sauce and the natural yogurt thoroughly.

Cut the pepper into strips.

Cut the burger buns in half.

And fry them.

Fry the bacon through.

Fry the pepper in the fat left after the bacon.

Let's start assembling the burger. First put down the jamón or bacon, the red pepper and the poached eggs.

Salt and pepper it, and spread the sauce on top.

If you made poached scrambled eggs, add them on top. Cover it all with the second half of the bun.

The burger with poached eggs is ready — time for breakfast (or dinner).
